Hello, Muffins!
I know you can attest to the fact that lately, the weather in Nairobi has been a cold especially in the evening which makes it the perfect time to have these spicy chickpea flour pancakes! Now, just to clarify chickpea flour is a gluten-free flour that's also known as besan flour or gram flour, which is the flour you use when making bhajia. In Kenya, I know most companies if not all have it named as gram flour on their packaging. You can find brands like Butterfly or Kamal.
I love this recipe because you can use any vegetables you like as long as they're finely chopped or shredded; which gives you so much flexibility and makes it easy to make with whatever you have at your disposal at the moment. Another thing is that this recipe can be used as a substitute for omelets for people who are don't like eggs, are allergic to them or are vegan.
So let's get to it!
Ingredients:
2 cups Gram/Chickpea/Besan Flour
1/2 tsp Turmeric
1/2 tsp Ground Coriander
1/2 tsp Cumin Seeds
1/2 tsp Ajwain/Carom Seeds
1 small Onion finely chopped
2 cloves Garlic minced or grated
1 bunch Dhania finely chopped
1 or 2 Fresh Chilies finely chopped
1 cup cooked veggies of your choice (I used leftover cauliflower rice)
1 cup Water
Salt to taste
Oil for cooking
Directions:
1. In a bowl, mix the chickpea flour, turmeric, coriander, cumin seeds, ajwain seeds, and some salt.
2. Add in the onion, garlic, dhania, and chilies and mix to combine.
3. Add in the water and mix thoroughly until you get rid of all the lumps the batter should be somewhat thick, kind of like an American pancake, not runny.
4. Add in your cooked veggies and mix until they are well incorporated into the batter.
5. Heat up your pan and add some oil. Add about 1/4 cup of the batter at a time to the pan and let it cook for about 2 minutes or until the top starts to dry up. Flip the pancake and cook the other side for about 1-2 minutes. Repeat this step until you finish the batter.
6. Serve them hot with masala tea, sauteed sweet potatoes, salsa or a chutney and ENJOY!
That's it! Simple, fast, flexible and downright flavorful! This recipe is also a fun way to incorporate more veggies and/or leftover veggies to your breakfast or snack without it being bland.
